I had a lot of veggies to used up, so I googled the ingredients and came up with a colorful vegetarian menus: tomato onion feta salad (recipe), leek beet avocado salad (recipe) and honey walnut beet greens (recipe).
The end result was a beautiful, colorful meal that tasted great, with the exception of the beet greens. Unfortunately I didn't clean them off well enough and they were a touch sandy. Oh well;)
And, the leek beet salad tasted better with feta cheese sprinkled over it, even thought that wasn't part of the recipe.
