Last night's dinner was vegetable ravioli with a sauce of my own creation--using ingredients that needed to be used up.
Basically I chopped up 5 tomatoes, 3 leeks (the white parts), and cut the asparagus into 1.5 inch pieces. I sauteed the leeks in a combination of olive oil and butter, then added the tomatoes and then the asparagus. After cooking for a few minutes and boiling off some of the liquid from the tomatoes, I added some chicken stock. I cooked the sauce for about 10 minutes and added salt and pepper to taste.

It was quite a yummy dinner-especially since it originated from an impromptu sauce.
